Breakfast Sushi w/ Smoked Salmon & Omelette

Ingredients

  • 1 cup of Sushi rice, cooked according the package instructions
  • 100 gr of smoked salmon finely chopped
  • 1 tbsp black, white or wasabi flavored sesame seeds
  • 2 tbsp chives or 2 spring onions finely chopped
  • 2 eggs cooked as an omelette, finely chopped
  • 1 tsp sesame oil
  • 1 tsp garlic powder
  • salt & pepper to taste
  • For serving:
  • extra sprinkle of sesame seeds
  • nori sheets
  • soy sauce
  • Wasabi or Sriracha mayo (3 tbsp mayo + 1tsp wasabi or Sriracha) 3 tbsp mayo + 1tsp wasabi or Sriracha

Instructions

  • Cook the Sushi rice according to the package instructions and let it cool down.
  • Cook the eggs as an omelette (whisk them, season with salt & pepper and cook in two batches in a pan). Then chop the smoked salmon, omelet and chives or spring onions. Place these ingredients in a bowl and add the rice. Finely, season with garlic powder, sesame oil and salt & pepper to taste.
  • With your hands form balls or triangles (I made 6 triangles). You can also wrap these in nori sheets to hold them together. Plus, I love the seaweed taste!
