Slice the mozzarella in 8 pieces and pat each piece dry (you will smash the mozzarella a bit, but that’s ok, just don’t break it completely).
Then season the mozzarella slices with garlic powder, Italian herbs, Pimenton and salt & pepper on both sides.
Run the mozzarella pieces through the flour, egg and Panko and repeat this process twice (skip the flour the second time) to get a good crust. This will protect the cheese from oozing out. You can also shape the patties a bit.
Fry the mozzarella until golden brown and season with salt & pepper. Then garnish with dried/fresh parsley and serve with the sauce. Enjoy immediately and don’t burn your mouth!
