Beat the eggs into a bowl and add all the ingredients (except for the butter and olive oil).
Heat up a pan and add the butter and olive oil to it.
Dip the bread in the egg mixture and scoop some of the onions on the bread until the bowl is empty. Cook for 2/3 minutes on both sides until the egg is cooked and golden
Place the pieces of bread on some kitchen towel paper and then sprinkle with some extra chili powder/chili flakes and fresh coriander (all optional).You can serve these toasts with some ketchup, yoghurt mint sauce or my favourite: some good old mayonnaise.
