Garam Masala French Style Toast

Ingredients

  • 3 slices of brown/white bread
  • 3 eggs medium size
  • 1 small red onion, finely chopped use as much as you like. I love onion
  • 1/2 tsp garlic powder
  • 1/2 tsp onion/Nigella seed optional
  • 1/2 tsp turmeric powder
  • 1/4 tsp Garam Masala
  • 1 red chili, finely chopped use as much as you like
  • fresh coriander leaves chopped (I’ve used 3 tbsp of coriander but you can add 1 tbsp or leave it out if you dislike the flavour) I’ve used 3 tbsp of coriander but you can add 1 tbsp or leave it out if you dislike the flavour
  • 1tbsp butter + 1tbsp olive oil for frying (I’ve used a combination of both) I’ve used a combination of both
  • salt to taste

Garnish

  • chili powder/red chili flakes
  • fresh coriander

Instructions

  • Beat the eggs into a bowl and add all the ingredients (except for the butter and olive oil).
  • Heat up a pan and add the butter and olive oil to it.
  • Dip the bread in the egg mixture and scoop some of the onions on the bread until the bowl is empty. Cook for 2/3 minutes on both sides until the egg is cooked and golden
  • Place the pieces of bread on some kitchen towel paper and then sprinkle with some extra chili powder/chili flakes and fresh coriander (all optional).You can serve these toasts with some ketchup, yoghurt mint sauce or my favourite: some good old mayonnaise.
