Jibarito or Smashed Plantain Sandwich (Vegan)

Ingredients

  • 1 plantain
  • 1 Vegan “Steak” or meat of your choice for one person
  • lettuce leaves
  • tomato slices
  • cheddar cheese (vegan) vegan
  • Sriracha mayo (3 tbsp vegan or regular mayo + 1 tbsp Sriracha) 3 tbsp vegan or regular mayo + 1 tbsp Sriracha
  • salt & pepper to taste
  • oil for frying the plantain and kitchen towel paper

Instructions

  • Cut the ends of the green plantain. Then slice along the side to remove the outside peel. 
  • Then cut across the plantain and cut each half in the middle. You’ll end up with 4 pieces.
  • Fry the plantains in some oil on medium heat, until they are golden yellow. Make sure you keep an eye on them. 
  • Then remove the plantains from the pan and don’t turn off the heat, because you will have to fry the once more. But first you’ll have to flatten the plantains with a Tostones or a cast iron pan (this worked for me). Then you’ll fry them once more for about 2-3 minutes until they’re golden brown. Place them on some kitchen towel paper to drain the excess oil.
  • Let the Tostones cool off and then start assembling your sandwich. Mix the (vegan) mayonnaise and Sriracha. Spread a layer on the bottom of a Tostones. Then add your lettuce, vegan “steak”, cheese, tomato, red onion and drizzle some more sauce before your top your sandwich with another Tostones.
