Fry your walnuts and bread golden brown in 2 tbsp oil and on medium heat. Season with Sumac, salt & pepper, mix well and remove from the pan.
Then slice your Halloumi and fry in the same pan with 2 tbsp olive oil until both sides are golden brown. This takes about 10 minutes on medium heat. Remove from the pan.
Toss your sliced cherry tomatoes, cucumber, shallot in a bowl and season with 2 tbsp olive oil, Zaatar and add salt & pepper to taste. Finally mix the lettuce leaves in.
N.B. You can also add the Halloumi and fried bread + walnuts in the bowl but I like my bread crunchy, so I topped it on my salad.
Serve the salad mixture on a plate, place the Halloumi in the salad and sprinkle the bread + walnut on top. Serve immediately!
