Brush the corn with olive oil and fry or grill in a pan for 5-10 minutes over medium to low heat. Allow the corn to cool and then cut the corn off the cob and set it aside.
Then finely chop the onions, cucumber and red cabbage and place them in a salad bowl. Add the lettuce and corn.
Mix the olive oil, lemon juice and Holy Guacamole herbs into a nice dressing and pour half of the dressing over the lettuce. Mix this well.
Spread the Creamy Guacamole on a plate and place the lettuce on top.
