Smash 2 avocados and flatten them out on a plate. Season the smashed avocados with a pinch of salt, garlic, chili (optional) powder and a squeeze of lemon juice. This way you are seasoning the entire surface. Mix well and store the avocado paste in the fridge.
Spiralize or finely cut the carrots in strips if you don’t have a spiralling device. Season it with a little bit of olive oil and salt & pepper. Set this aside.
Cut the mushrooms in half and cut each half in 3 or 4 pieces depending on the size. Sauté them in a little bit of olive oil on medium to high heat. This will take about 3 to 4 minutes until they are cooked and browned.
In the meantime cook your vegetarian Bratwursts according to the package instructions. When they are cooked let them sit on some kitchen towel paper.
Assemble your baguettes (you can toast them first if you like) by spreading a royal amount of smashed avocado, top it with one bratwurst, the mushrooms and carrots.
