Slice your baguette in 1½ cm pieces.
Then in a bowl whisk you eggs together withe minced garlic, chopped parsley, grated Parmesan cheese, onion powder and salt & pepper to taste.
Heat up 2-3 tbsp of olive oil in a pan and allow it to get hot
The coat each slice of bread with the eggy mixture and cook for about 2 minutes each side until the bread is gold.
Place the slices on some kitchen towel paper to suck in any excess oil and serve immediately!
TIP:- Serve your eggy toasts with a tomato chutney, smoked salmon & avo or just have them on its own.
