Savory Eggy Toast
Ingredients
- 6 slices of baguette
- 2 large eggs or 3 small ones
- 2 garlic cloves minced
- 2 tbsp Parmesan cheese grated
- 1 tbsp parsley finely chopped
- 1 tsp onion powder
- 2-3 tbsp olive oil
- salt & pepper to taste
Instructions
- Slice your baguette in 1½ cm pieces.
- Then in a bowl whisk you eggs together withe minced garlic, chopped parsley, grated Parmesan cheese, onion powder and salt & pepper to taste.
- Heat up 2-3 tbsp of olive oil in a pan and allow it to get hot
- The coat each slice of bread with the eggy mixture and cook for about 2 minutes each side until the bread is gold.
- Place the slices on some kitchen towel paper to suck in any excess oil and serve immediately!
- TIP:- Serve your eggy toasts with a tomato chutney, smoked salmon & avo or just have them on its own.
