Sweet Potato & Garlic Galette

Cook Time 20 minutes
Total Time 30 minutes

Ingredients
  

  • 1 large sweet potato
  • 2 tbsp olive oil
  • 1 tbsp butter + 1 tbsp olive oil
  • 2 tbsp Parmersan cheese (grated) 
  • ½ tsp garlic powder
  • salt & pepper to taste

For garnish

  • parsley (finely chopped) finely chopped

Instructions
 

  • Preheat your oven to 200C or 400F.
  • Wash, peel and thinly slice your sweet potato.
  • Layer the slices in a round oven-dish (20-25 cm) lined with parchment paper. 
  • Drizzle 2 tbsp of olive oil over the galette followed by a sprinkle of salt & pepper.
  • Cover the galette with thin foil and bake for 15-20 minutes (depending on your oven).
  • After 15-20 minutes remove the thin foil and pour a mixture of 1 tbsp of melted butter, 1 tbsp olive oil, garlic powder and Parmesan cheese over the galette. Place it back in the oven for and extra 5-7 minutes until the sweet potato slices are cooked through and have a nice golden brown colour.
