Xmas Dinner for 2!

So, this year I wanted to come up with a million recipes for your Christmas dinner. Unfortunately, a lot happened and with lockdown No.3 whilst dealing with other stuff, I didn’t have time to work on as many recipes as I wanted.

However, I did make a Christmas dinner for two (greedy persons 😉 consisting of a Chicken Roll stuffed with Cranberry Compote & Brie, Sweet Potato and Garlic Galette and Roasted Purple Brussel Sprouts. I shared this lovely meal with my two neighbours, who have become my good friends during this Pandemic. I guess, that’s the bright side of this whole drama; that we get to connect and reconnect with others and ourselves.

Creamy Leek Mash w/ a Ginger and Chili “Rookworst” (Smoked Sausage)

Delicious mashed potatoes with creamy soft leek and an aromatic Ginger and Chili Rookworst (smoked sausage); sounds like pure comfort for these gloomy days that are awaiting us, right? Well, this classic Dutch Stamppot (one pot meal with mashed potatoes and vegetables) with a Chinese twist is what you’ll need when it comes to rustling up a fall/winter midweek meal 😉

Black Bean Garlic Chicken

Have you ever had Black Bean Garlic Chicken at a Chinese restaurant? Well, I have and it’s one of my fave dishes to order. I always thought that this dish was difficult to recreate, because of the fermented black beans situation and the unique flavour of this particular ingredient. Yet, these days you can buy fermented black bean pastes in any Asian grocery stores and they even come with a garlic flavour. So there’s also no need to peel a lot of garlic cloves and you can have a restaurant quality meal in under 25 minutes!
