Huevos Rotos

I remember the first time I had a Spanish egg dish, “huevos rancheros” when I went to Lanzarote with my parents. We arrived there at night and rented a car. But as it was our first time there and the roads weren’t lit at night, we drove into a small town to ask for the way. Yet, before we got out there ya girl smelled some food and before you knew I was eating huevos rancheros on a bun. It was so good! Thank god for the food, because it got us home as well.

As for this Huevos Rotos, it’s another warming dish with eggs and potatoes. I made it my way and used some white mushrooms and shallots. Try it out!

In my third cooking video I’m going to make a tasty snack with one of my favorite dried and salted fish: codfish!

“Bacalhau/Bakkeljauw” is a fish that is dried and salted so that you can keep it longer. But before you use the fish, you must desalt it first, otherwise it cannot be eaten. You can do this by soaking or boiling it in water. This also makes it soft and easy to work with.

Black Sushi w/ Smoked Salmon & Green Algae Sauce

I’ve seen this black sushi on Pinterest and was so inspired to make my own version with the selection of ingredients that Sunday Natural sent me. I’ll elaborate more on that below, but there’s something about dark food that appeals to me, maybe it reminds me of the earth, I don’t know. But what I do know is that this black/forbidden rice has that WOW factor! Don’t you agree?

Oven Baked Chicken Wings w/ Parmesan & Garlic

This recipe probably belongs to the category: “stop listening to the voices in your head and just keep sharing what you love.” I’ve made this recipe many times and often thought of sharing it, but I also thought it’s too easy, we have a dozen of these already or it’s not interesting enough. Well, don’t let these stupid voices kill your pleasure in sharing something that you’re passionate about. Because this recipe brought me comfort on nights where I felt a bit alone and wanted to eat something while watching a movie. It gave me a good feeling at the end of the night and to me that’s also important to share. Try it out yourself!

Churros Waffles

Though am not a huge, sweet tooth, I do like to make some cheeky waffles for breakfast or lunch when I want to treat myself a bit. I mean shouldn’t we all every now and then 😉 The thing is also when you get older, you (maybe I shouldn’t generalize) still feel like a kid when having a non-conventional breakfast which isn’t focusing on any food groups. But see that’s the beauty of being adult, right? You can do whatever you want. Well not everything, but a cheeky breakfast/lunch is something I do anticipate after a long workweek and to usher in the weekend.

It’s a lot for a title, but I honestly didn’t know what to call this vegetarian dinner? Do you? Or should I just call out all the components and make it into a title haha… Anyways, for this weeknight meal, I combined Asian flavours with Italian ingredients and plated it up like the French do. By now you must know I love a little fusion and confusion 😉 But the real question is, would you try this out?
