I got a lot of tomatoes so, I decided to make a Zaalouk Inspired Tomato Sauce, which I can smear on my bread or have as a side with some Bulgur, Quinoa or even Basmati Rice. Zaalouk is a Moroccan dish and is originally made with eggplants, but since I didn’t have any, I sticked to tomatoes and created a lovely lunch bun alongside some fried Halloumi and avocado.
