Mini Scones w/ Gochujang, Sun-Dried Tomatoes & Mozzarella

Ya girl finally got back in the kitchen last weekend and whipped up a few Airfryer recipes for you! Starting with this baby: Mini Scones w/ Sun-Dried Tomato, Gochujang & Mozarella. These are very easy to make and bake in the Philips Airfryer. Normally it takes me about 10 mins in an oven, but these were done in 7 mins! Plus, they came out perfectly crisp and soft & fluffy in the middle. Check out this recipe with a Korean twist and hope you enjoy!

Huevos Rotos

I remember the first time I had a Spanish egg dish, “huevos rancheros” when I went to Lanzarote with my parents. We arrived there at night and rented a car. But as it was our first time there and the roads weren’t lit at night, we drove into a small town to ask for the way. Yet, before we got out there ya girl smelled some food and before you knew I was eating huevos rancheros on a bun. It was so good! Thank god for the food, because it got us home as well.

As for this Huevos Rotos, it’s another warming dish with eggs and potatoes. I made it my way and used some white mushrooms and shallots. Try it out!
