
Peach & Mango Crisp w/ Amaretto Raisins
Ingredients
- 1 cup ripe and juicy peaches cut into pieces
- 1 cup ripe and juicy mangoes cut into pieces
- ¼ cup Amaretto raisins optional, I submerged and soaked a cup of raisins for a week in some Amaretto
- 2 tbsp cornstarch
- ½ cup (cane/granulated) sugar
- ½ cup all-purpose flour
- ¼ cup oats
- 4 tbsp butter melted
- ¼ tsp cinnamon
- 1 tbsp vanilla sugar or store-bought sachets
- 1 tsp baking powder
Instructions
- Preheat your oven to 165-175 C (depending on the heat of your oven) or 350 F.
- In a bowl mix the peaches, mango, raisins, and cornstarch together. Then spoon the fruit into a ramekin which is lightly oil sprayed or buttered.
- In the same bowl mix the flour, sugar + vanilla sugar, oats, cinnamon + baking powder and butter together. Mix well until you have a rough and sandy texture.
- Top the ramekins + fruit with the crisp mixture and leave some larger clumps (those are the best parts).
- Bake the crisp for 25-35 minutes in a preheated oven until the topping is crispy and the fruit is cooking and bubbling up. Let it cool down a bit before serving.
- Serve with some vanilla ice cream or whip cream and enjoy!
