
Cottage Cheese Pancakes w/ Peach & Raspberry Compote
Ingredients
- ¾ cup cottage cheese
- 2 eggs
- ½ tsp vanilla essence / extract
- 1 tbsp (white / cane) sugar
- ½ tbsp baking powder
- ½ cup all-purpose flour
- 2 tbsp (sunflower) oil / butter for cooking

- For the (Wild) Peach & Raspberry Compote:
- 2 wild peaches
- handful of raspberries
- 4 tbsp (white / cane) sugar
- 1 tsp lemon juice
Instructions
- Cottage Cheese Pancakes w/ Peach & Raspberry Compote:Mix all the ingredients in a bowl. Place some oil or butter in a pan. Add 3 to 4 scoops in the pan and cook or fry the pancakes on medium heat until both sides are golden brown and cooked.
- (Wild) Peach & Raspberry Compote: Place all the ingredients in a thick pan and let the fruits soften and cook for about 15 minutes on medium heat. Keep stirring occasionally. The sauce will thicken further when it cools down. And you can make this in advance as well.
