Surinamese Style Canned Sardines on Toast

Surinamese people love their canned sardines in oil or in tomato sauce by Morjon or Brunswick. We eat the sardines in tomato sauce over rice and sauté it first with some onion, garlic, Madame Jeanette pepper and a Maggie cube. It’s straight up comfortfood. And the sardines in oil we prefer them as a “choka” (mash) with raw onions, a bit of garlic powder, Madame Jeanette pepper, lemon juice, a little bit of the oil and salt / a Maggie cube. Today, I’ll share the “choka” version and serve it on some buttered sourdough toast. Prepare for some canned goodness!

I’ll elaborate more on that below, but there’s something about dark food that appeals to me, maybe it reminds me of the earth, I don’t know. But what I do know is that this black/forbidden rice has that WOW factor! Don’t you agree?
